These honey biscuits are so buttery, flaky and delicious your friends will think you spent time in a French Bakery learning the art of laminated pastry! They have buttery sweet and salty layers of deliciousness. The trick is all in how you prep the butter. Follow the instructions exactly for the butter and this recipe won’t disappoint.

Prep time is approximately 35 minutes and bake time 14 minutes

Honey Biscuits made with Honey Bee Zen Fireweed Honey

  • 3 cups of Unbleached all-purpose flour. I love Treasure Life Four Mills Four from the same valley my bees fly in Creston BC
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 6 oz by weight of FROZEN grated butter
  • 3 oz by weight Honey Bee Zen Wildflower Honey (For a milder flavour, use our Honey Bee Zen Fireweed Honey)
  • 1 cup of Buttermilk
  • 1 – 2 teaspoons of Pure Vanilla Extract (depends on how much vanilla you like)

Instructions

  1. Preheat oven to 400 degrees and line baking pan with parchment paper.
  2. Add flour, baking soda, and salt to a large bowl and mix all together
  3. In a separate bowl whisk the buttermilk, honey and vanilla.
  4. Take the butter out of the freezer. This is very important. The butter must be frozen.
  5. NOTE: Grate the butter. I find it easiest to run it through my food processor grater but you can also do it by hand.
  6. Add the grated butter to the dry mixture and mix it with your hands until it becomes a crumbly mixture.
  7. Make a hole in the middle of the flour mixture and pour in the wet ingredients. Gently mix with your hands to form into a dough.
  8. You can turn the dough out onto a floured surface and knead to combine. I like to turn the dough onto parchment paper instead, so I don’t add more flour as it can make the dough dry. Don’t overmix.
  9. Press the dough out with your hands about ¾ to 1” thick and cut using a round cookie cutter or a glass. Place the biscuits on the parchment lined baking pan.
  10. Bake for 12-14 minutes or until golden brown. Remove from oven.
  11. Serve with butter or try it with our Honey Butter or Cranberry Orange Compote.
