Description
Looking for true, raw honey? Our Swan Valley brand comb honey is as pure and raw as you can get. We practice an old art of creating comb honey with natural beeswax foundation. Boxes are placed on hives at the height of honey flow and carefully managed to create beautiful frames of clean, wholesome honeycomb.
We produce this in two package types: a 250g cut block packed in a travel-safe container, and a 250g Ross Round package in which the bees have built their comb structure right into the ring. Both types are perfect as gifts. We recommend the Ross Round packaging for those travelling by aircraft. The box packaging is perfect as a gift for a house party.
Enjoy this delicacy in a number of ways: served on a charcuterie board with cheeses such as brie or bleu, spicy salamis and your favaourite crackers. Or just scoop it out and eat it directly. The beeswax is digestible.
And here’s a neat parlour trick: eating the honey with an almond causes the wax to emulsify and virtually disappear!
This is a seasonal product and may not be available in spring, depending on stock.
HOW WE KEEP BEES AND TAKE CARE OF OUR HONEY
We practice holistic beekeeping and treat our bees with great care. We don’t pasteurize or heat our honey above nest temperature during extraction or bottling. That way we protect the incredible purity, flavour and rawness of our wonderful product.
This is what makes our honey so special: it is never really the same from one season to the next, and the flavours can subtly change. Even so, there is a stability and regularity to the honey our bees produce. Our reward over the years is a fine natural food. And our customers tell us this is perhaps the best honey they’ve tasted.
HOW DO YOU KNOW THIS IS PURE HONEY?
We rigorously protect the purity of our honey; we regularly send samples in for floral fingerprinting by Canadian honey authentication programs. These programs can identify specific forages and pollens. This process also identifies honeys that have been adulterated with other sugars. It is no surprise that our honeys pass with flying colours.
Our pathway to success as beekeepers is to always remember it is our bees who are our most important employees. In other words, taking care of our bees comes first. That’s the Honey Bee Zen way.
