Description
Harvest Moon wildflower varietal honey is a pure, raw unpasteurized honey. It evokes images and tastes of late summer and early fall. It is one of our signature varietals, collected late in the summer from mature plants near the end of their bloom.
As such, it tends to be a darker, richer and more complex honey. We’ve won awards for this honey, which usually comes in at a darker golden or amber colour. It is still separate and distinct from our Kootenay Wildflower honey.
If using for baking, it adds a richness in flavour you won’t get from some of our other varietals, such as Fireweed. This honey, like all of our varieties, is lovingly produced from healthy bees, using holistic beekeeping.
We don’t get Harvest Moon in great quantities, so when it is out of stock that’s it until next season.
HOW WE KEEP BEES AND TAKE CARE OF OUR HONEY
We practice holistic beekeeping and treat our bees with great care. We don’t pasteurize or heat our honey above nest temperature during extraction or bottling. That way we protect the incredible purity, flavour and rawness of our wonderful product.
This is what makes our honey so special: it is never really the same from one season to the next, and the flavours can subtly change. Even so, there is a stability and regularity to the honey our bees produce. Our reward over the years is a fine natural food. And our customers tell us this is perhaps the best honey they’ve tasted.
HOW DO YOU KNOW THIS IS PURE HONEY?
We rigorously protect the purity of our honey; we regularly send samples in for floral fingerprinting by Canadian honey authentication programs. These programs can identify specific forages and pollens. This process also identifies honeys that have been adulterated with other sugars. It is no surprise that our honeys pass with flying colours.
Our pathway to success as beekeepers is to always remember it is our bees who are our most important employees. In other words, taking care of our bees comes first. That’s the Honey Bee Zen way.
